Celebrating Dr. Martin Luther King Jr. with Chef Edna Lewis inspired Southern Cuisine Menu



In celebration of Dr. Martin Luther King Jr., we are featuring a Southern foods’ inspired menu reflecting the talents and vision of acclaimed African-American chef and cookbook author, Edna Lewis. Ms. Lewis was a trailblazer in her time. She won many culinary awards as she introduced the country and the world to Southern cuisine: prepared simply, using local, seasonal and fresh ingredients. The key to her  cooking was being resourceful: using available ingredients such as root vegetables and collard greens and finding interesting ways to pair and share flavors. She pan-fried chicken and served seasonal produce in simply delicious ways. Enjoy a Chef Edna Lewis inspired Southern menu for both lunch and dinner throughout campus today.
